Christmas morning is such an exciting time for both kids and parents. With the joy of presents, spending time together, and that magical feeling in the air, everyone is happy! However, by early morning, everyone is starving. We’re thrilled to have Jessica Potts of A Happy Food Dance with us today to share her amazing Eggnog French Toast recipe! This delicious take on her mother’s recipe is definitely a crowd pleaser. The delicious eggnog twist creates a holiday flavor that can’t be beat. Your loved ones will no doubt be asking for second servings of this easy breakfast! Here’s what Jessica has to say:

“What’s more important than the big holiday meal? Well, if you ask me, it’s breakfast on Christmas morning. Our family would always get up super early to open presents and rifle through our stockings. You were wildly tired but all hyped up on cheer and Christmas joy at the same time. But as soon as about 9 am rolled around, I was ravenous! So a big Christmas breakfast was always a welcome sight. It was usually pancakes or waffles, but every now and then my mom would make a big spread of French toast. I guess this is my homage to my mom’s Christmas breakfasts – with a twist, of course. This French toast is dipped in an eggnog mixture, seasoned heavily with cinnamon and nutmeg and sprinkled with granulated sugar, which gives the bread a slightly crunchy, caramelized texture. This is the breakfast you should be serving Christmas morning!”

EGGNOG FRENCH TOAST RECIPE

Serves: 4-6
Prep time: 30 minutes
ingredients
  • 4 eggs
  • 2 cups of your favorite eggnog
  • 1 tablespoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon vanilla
  • ¼ cup granulated sugar
  • 10-12 slices of thick bread
  • Butter, maple syrup and powdered sugar for serving
instructions
  1. In a medium bowl combine eggs, eggnog, cinnamon, nutmeg, and vanilla. Whisk together.
  2. Soak each piece of bread for about 90 seconds on each side. Just before adding to a hot griddle, sprinkle each side with granulated sugar.
  3. Cook until golden brown, then flip, and cook until opposite side is also golden brown. About 2-3 minutes.
  4. Top with a pat of butter, dust with powdered sugar, and drizzle with maple syrup.
  5. Enjoy!
